How to make it

  • preheat oven to 375F.
  • in a small bowl mix fruit and rum-set aside
  • in a large bowl, beat sugar and butter' add eggs-one at a time- beating until well blended
  • stir in rest of the ingredients, except fruit mixture and coconut, and beat at least 30 times by hand
  • fold in coconut and fruit mixture
  • pour into a greased 9 X 5 inch pan
  • bake for 40-45 minutes, until golden brown and a toothpick, inserted in center comes out clean
  • cool 20 minutes; remove from pan and cool completely before slicing.
