- 1/2 diced mixed candied fruit shopping list
- 2 Tbs. dark rum shopping list
- 1/3 cup sugar shopping list
- 1/3 cup soften butter shopping list
- 2 eggs shopping list
- 1 cup coconut cream shopping list
- 1 cup yellow cornmeal shopping list
- 1 cup all porpose flour shopping list
- 1 1/2 tsp. baking powder shopping list
- 1/2 tsp.salt shopping list
- 1/2 tsp. ground cinnamon shopping list
- 1/4 tsp. ground cloves shopping list
- 1 cup shredded fresh coconut shopping list
How to make it
- preheat oven to 375F.
- in a small bowl mix fruit and rum-set aside
- in a large bowl, beat sugar and butter' add eggs-one at a time- beating until well blended
- stir in rest of the ingredients, except fruit mixture and coconut, and beat at least 30 times by hand
- fold in coconut and fruit mixture
- pour into a greased 9 X 5 inch pan
- bake for 40-45 minutes, until golden brown and a toothpick, inserted in center comes out clean
- cool 20 minutes; remove from pan and cool completely before slicing.
