How to make it

  • Preheat oven to 350 degrees.
  • Grease a 9-inch square pan.
  • Combine sugar, brown sugar and eggs. Mix well.
  • Stir in flour, baking powder and cashews.
  • Pour batter into prepared pan.
  • Bake for 20 to 25 minutes.
  • For topping, melt butter.
  • Remove from heat. Add cashews, brown sugar and half-and-half. Mix well.
  • Spread baked bars immediately with topping.
  • Broil about 12 inches from heat for 1 or 2 minutes, or until bubbly and golden.
  • Cut into 24 squares.

    Make sure you bake the cookie base the full time, and watch super carefully when broiling the topping. I think I undercooked mine a little and they were extremely tender and chewy.
