This is an extraordinary homemade white wine mustard, flavoured with malt vinegar and made rich and smooth with eggs, simmered over a water bath. Makes about 2 cups, a great Christmas gift with some home-made pretzels and some German beer!

  • 1/2 cup white sugar
  • 3/4 cup ground dry mustard
  • 1/4 cup white vinegar
  • 1/4 cup malt vinegar
  • 1/2 cup dry white wine
  • 3 eggs, beaten
  • pinch of salt

Directions
  1. Over a simmering water bath in the top of a double-boiler, whisk together sugar, mustard, vinegars, wine, and eggs.
  2. Cook while whisking constantly, for about 7-8 minutes, or until thick.
  3. Allow to cool completely, then bottle and place in the refrigerator.
  4. Stores well in the refrigerator for up to 2 months.
