Ingredients
  • 1 box taquitos (I used Jose Ole Steak & Cheese) partially thawed
  • 1 20 oz can enchalada sauce
  • 2 Cups Mexican blend cheese - divided
  • 1 16 oz can refried beans - heated
  • 1/3 Cup each sliced green onions and red onions combined
  • 1 small can sliced black olices - drained
  • Sour Cream

Directions
  1. Preheat oven to 375 degrees
  2. Pour 1/3 of the enchalada sauce into a lightly greased 11x7x2 baking dish
  3. Place 1/2 of the enchaladas (usually 8) into the baking dish
  4. Spread the heated refried beans over the taquitos
  5. Layer 1/3 more sauce and 1/2 onion mixture then 1/2 the cheese
  6. Top with the remaining (7) taquitos and the remaining enchalada sauce
  7. Bake covered for 25 minutes or until heated through.
  8. During the last 5 minutes of cooking, top with the remaining onion mixture and cheese.
  9. After baking, garnish with black olives and sour cream

Looks easy and yummy..thank u!

Sounds good! jett

Very easy recipe! Thanks for sharing, deb

I finally got around to making this. It was easy and extremely filling! I thought the amount of cheese was overwhelming for such a small amount of taquitos so I used about half the amount. Very good. Added a photo.

Yum!
