Taquito Enchaladas

- 1 box taquitos (I used Jose Ole steak & cheese) partially thawed shopping list
- 1 20 oz can enchalada sauce shopping list
- 2 Cups Mexican blend cheese - divided shopping list
- 1 16 oz can refried beans - heated shopping list
- 1/3 Cup each sliced green onions and red onions combined shopping list
- 1 small can sliced black olices - drained shopping list
- sour cream shopping list
How to make it
- Preheat oven to 375 degrees
- Pour 1/3 of the enchalada sauce into a lightly greased 11x7x2 baking dish
- Place 1/2 of the enchaladas (usually 8) into the baking dish
- Spread the heated refried beans over the taquitos
- Layer 1/3 more sauce and 1/2 onion mixture then 1/2 the cheese
- Top with the remaining (7) taquitos and the remaining enchalada sauce
- Bake covered for 25 minutes or until heated through.
- During the last 5 minutes of cooking, top with the remaining onion mixture and cheese.
- After baking, garnish with black olives and sour cream

I finally got around to making this. It was easy and extremely filling! I thought the amount of cheese was overwhelming for such a small amount of taquitos so I used about half the amount. Very good. Added a photo.
