Ingredients

How to make it

  • Preheat oven to 375 degrees
  • Pour 1/3 of the enchalada sauce into a lightly greased 11x7x2 baking dish
  • Place 1/2 of the enchaladas (usually 8) into the baking dish
  • Spread the heated refried beans over the taquitos
  • Layer 1/3 more sauce and 1/2 onion mixture then 1/2 the cheese
  • Top with the remaining (7) taquitos and the remaining enchalada sauce
  • Bake covered for 25 minutes or until heated through.
  • During the last 5 minutes of cooking, top with the remaining onion mixture and cheese.
  • After baking, garnish with black olives and sour cream

    I finally got around to making this. It was easy and extremely filling! I thought the amount of cheese was overwhelming for such a small amount of taquitos so I used about half the amount. Very good. Added a photo.
