How to make it

  • Cook the potatoes in boiling. salted water 12 - 15 minutes.
  • Darian and mash
  • Meanwhile, in a saucepan, combine milk and 4 Tbl of the butter
  • Heat until butter is melted
  • Add chives or scallions, reduce to simmer and cook 2 - 4 minutes
  • Add the potaoes, salt and pper tho the mil mixture and stir until blended
  • To ser, spoon Champ into a deep bowl, make a well in the center and top with remaining butter
  • Serve at once.

    This recipe reminds me of how my mom makes mashed potatoes. She would mash the potatoes with butter, milk, salt and pepper. Then she would take a teaspoon, scoop up a little butter, and then a little potato, to 'check the seasoning' she would say. She would do this about three times before making a decision that they were 'ok'. These look delicious! Thanks for sharing. - Natalie
