How to make it

  • In the microwave oven or over a double boiler, melt chocolate chips, stirring occasionally until smooth. Remove from heat and stir in the rum
  • and corn syrup.
  • In a medium bowl, toss together the crushed vanilla wafers and ground walnuts. Pour the chocolate mixture over the crumbs in the bowl and blend well using your hands. Shape into 1 inch balls
  • Roll each cookie in confectioners' sugar to coat.
  • Store in an airtight tin for at least a week before serving.

    As far as in the fridge for a week goes... It helps them to "ripen" Kind of like a fruit cake does when soaked with booze and allowed to set away for a bit....

    Thats a great question...I have no idea why...I can't believe I didn't ask that...This is the recipe I was given and I didn't question it..Eat 'em as soon as ya want I guess...I know they are good in a weeks time...>;o)
