How to make it

  • This is definitely a French recipe, as it starts off with a classic roux.
  • Mix flour and milk in a small sauce pan with a wisk, until smooth.
  • Cook over medium heat, until it forms a paste (roux).
  • Don't let it brown.
  • Stir it a lot to prevent it from sticking.
  • Remove from heat.
  • Let this cool for about 7 minutes, until its just mildly warm.
  • In your mixing bowl, beat sugar and butter until fluffy.
  • Add the cooled flour mixture to the sugar mixture.
  • Beat on HIGH speed, as you want to incorporate air into this.
  • Beat for 10 minutes, until the sugar crystals are completely dissolved.
  • Add vanilla and mix.
  • Fold in lemon zest if you are using it.
  • Keep it refigerated if you don't plan to eat it quickly.

    I love this recipe! I use the microwave to make the roux. It is really easy: Mix flour and milk in a microwave safe measuring cup or bowl with a whisk, until smooth. Cook for 30 seconds on high in your microwave. Whisk. Cook for 30 more seconds. Whisk again. Cook 30 more seconds. Whisk. If the mixture has formed a paste, let cool until ready to beat into the sugar/butter mixture. If it is still not thick enough, cook in 15 second increments, whisking between cooking times until thick. Makes this recipe soooo easy when you use your microwave for the roux!

    This is perfection! Not that hard to make, just be sure to get the roux right (#3) and do beat for the full ten minutes (#11). Very light, creamy, fluffy -- just right on the yellow cake I baked for my grown-up son's birthday :)

    I made this and you were right. Its very light. Much better then the sugary ones in the can. It felt like I could eat it all day. I also took a few strawberries cut them into small cubes and mashed them inside. It was very good. (^-^)

    I've never had a frosting recipe such as this. However, I wll most definitely try it......... It sounds a little time-consuming, though, so I'll save it for later. Thanks!!
