Ingredients
  • 1 C Milk
  • 4 TBSP all purpose flour
  • 3/4 C butter (room temp)
  • 1 C sugar
  • 1 tsp vanilla
  • 1 TBSP finely grated lemon zest (optional)

Directions
  1. This is definitely a French recipe, as it starts off with a classic roux.
  2. Mix flour and milk in a small sauce pan with a wisk, until smooth.
  3. Cook over medium heat, until it forms a paste (roux).
  4. Don't let it brown.
  5. Stir it a lot to prevent it from sticking.
  6. Remove from heat.
  7. Let this cool for about 7 minutes, until its just mildly warm.
  8. In your mixing bowl, beat sugar and butter until fluffy.
  9. Add the cooled flour mixture to the sugar mixture.
  10. Beat on HIGH speed, as you want to incorporate air into this.
  11. Beat for 10 minutes, until the sugar crystals are completely dissolved.
  12. Add vanilla and mix.
  13. Fold in lemon zest if you are using it.
  14. Keep it refigerated if you don't plan to eat it quickly.

I also make ths recipe but i add a can of drained crushed pineapple by hand at the end of the whipping process. my family asks for it all the time.
