Smoked Ham Blackeyed Pea Collard Green Soup Recipe
Easy, quick, tasty soup. Smoked ham, canned black-eyed peas, fresh collard greens, chicken broth, onion and garlic combine to make this a southern delight! Serve with hot cornbread and butter.

Ingredients
  • 1 medium onion, chopped
  • 1 garlic clove, chopped
  • 4 ounces of cooked smoked ham
  • 2 tablespoons olive oil
  • 1/2 pound collard greens
  • 1 cup chicken broth
  • 3 cups water
  • 16 ounce can black-eyed peas
  • 1 teaspoon cider vinegar

Directions
  1. In 3-quart saucepan, cook onions, garlic, ham over moderate heat, stirring occasionally
  2. While onion mixture is cooking, wash, discard stems and center ribs from collards
  3. Finely chop leaves
  4. Add collards, broth, water to onion mixture
  5. Simmer until collards are tender, about 20 minutes
  6. Rinse and drain black-eyed peas
  7. In a bowl mash half of peas with a fork
  8. Stir mashed and whole peas into soup and simmer 5 minutes
  9. Season soup with salt and pepper, stir in vinegar
  10. Makes about 4 cups
