White wine alfredo over scallops and penne

- 15-20 large sweet scallops ( about 1- 1 1/2 lbs) shopping list
- 1 full bottle of white wine (NOT cooking wine, it is too vinegary and overpowers the scallops) shopping list
- 1 c heavy (whipping) cream shopping list
- 1/2 c parmesan cheese, freshly grated shopping list
- 3 T garlic shopping list
- 1 T butter shopping list
- 2 lbs penne or Farafelle pasta shopping list
- black pepper to taste shopping list
How to make it
- Boil water for pasta, prepare as directed on package.
- Combine cream, butter and garlic in large sauté pan. Bring to simmer and then remove from heat.
- In a separate pan, reduce the wine down by 2/3.
- Drain and rinse pasta.
- Add Parmesan to cream sauce, simmer until thick.
- Add wine reduction to sauce. Reserve 1/3c.
- VERY BRIEFLY sauté the scallops in the remaining wine reduction. (No more than a minute.)
- Add remaining wine and scallops to Alfredo, simmer for 1-1/2 minutes to allow scallops to finish cooking
- Serve.
