Ingredients

How to make it

  • Cut bell peppers and carrots into strings.
  • Dice onions and garlic.
  • In a larg saucepan, heat olive oil. Add onion and cook over medium to low heat until transparent.
  • Add garlic and cook until almost brown.
  • Then add tomatoes, vegetable stock, bell peppers, carrots, cajun seasoning, cayenne pepper and cook for 1/2 hour over low to medium heat stiring every few minutes. (don't let it burn on the bottom of the pan)
  • In a large stock pot, fill with water about 2/3 full, and add 1 tbsp. kosher salt and stir. Let boil, then add pasta noodles. Boil al dente.
  • Back to the sauce...Add the 2/3 of the basil and all of the oregano and continue to cook for another 1/2 hour.
  • Sauce should reduce down to a farely thick consistancy.
  • Season, to taste, with salt and pepper. Turn off heat.
  • Drain pasta, and put back in the stock pot.
  • Add 3 tbsp. EVOO, and dice a little basil and mix.
  • Add sauce to pasta noodles and stir...
  • NOW EAT!!!
  • ****add chicken, shrimp, or crab meat for extra fun! I also like to add some garlic bread to the feast! :)
  • tip: if adding shrimp or crab meat, don't mix it in the sauce ahead of time.
