Spicy Cajun Pasta Recipe
This is actually pretty healthy! (as pasta goes), It is SPICY and has lots of vegatables...many that I used to push to the side of the plate as a child! But I have grown to love the flavors!

Ingredients
  • 6 ounces EVOO (extra-virgin olive oil)
  • 1 yellow onion, minced
  • 2 cups vegetable stock
  • 7 medium-sized garlic cloves, crushed
  • 6 cups skinned and diced Roma tomatoes
  • (canned is fine too)
  • 1 cup of string carrots (usually you can buy them already in strings)
  • 1 yellow bell pepper (cut in strips)
  • 1 green bell pepper (cut in strips)
  • 3 tablespoons thinly sliced fresh basil leaves
  • 1 tablespoon minced fresh oregano leaves
  • handful of cajun seasoning
  • 1 tbsp. cayenne pepper
  • Salt and freshly ground black pepper
  • 1 tbsp. kosher salt

Directions
  1. Cut bell peppers and carrots into strings.
  2. Dice onions and garlic.
  3. In a larg saucepan, heat olive oil. Add onion and cook over medium to low heat until transparent.
  4. Add garlic and cook until almost brown.
  5. Then add tomatoes, vegetable stock, bell peppers, carrots, cajun seasoning, cayenne pepper and cook for 1/2 hour over low to medium heat stiring every few minutes. (don't let it burn on the bottom of the pan)
  6. In a large stock pot, fill with water about 2/3 full, and add 1 tbsp. kosher salt and stir. Let boil, then add pasta noodles. Boil al dente.
  7. Back to the sauce...Add the 2/3 of the basil and all of the oregano and continue to cook for another 1/2 hour.
  8. Sauce should reduce down to a farely thick consistancy.
  9. Season, to taste, with salt and pepper. Turn off heat.
  10. Drain pasta, and put back in the stock pot.
  11. Add 3 tbsp. EVOO, and dice a little basil and mix.
  12. Add sauce to pasta noodles and stir...
  13. NOW EAT!!!
  14. ****add chicken, shrimp, or crab meat for extra fun! I also like to add some garlic bread to the feast! :)
  15. tip: if adding shrimp or crab meat, don't mix it in the sauce ahead of time.

Alterations


tip for noodles...DO NOT rinse them. Rinsing noodles after boiling washes off the starches that help the sauce adhere to the noodles.


Instead of green bell peppers use fresh seeded jalapenos(2 should work). Yellow peppers have a tendency to make a dish a little sweet. If you do this use half the amount of cayenne or white pepper. Cajun does not mean causing blisters on the inside of your mouth.
