How to make it

  • Put all of the ingredients in a blender add in some of the adobo sauce from the chipotle peppers. Blend. Put a pork loin, pork chops or chicken pieces in a large storage bag, pour the marinade over the meat, reserving 1/4 cup of marinade for basting. Put in refridgerator for 1-2 hours. Do not leave the meat in the marinade longer than 3 hours. The lime juice will start to "cook" the meat. Season the meat with salt and pepper. Grill the meat, basting with the marinade, until done.

    I just marinated a ham in it. I think it sounds fabulous! The marinade is flavorful and zesty, the way I like it! Can't wait to see how the whole thing comes out tonight.
