How to make it
- Two ways to tell a pineapple is ripe. Smell, or pull the very center leaves, the little ones. If it pulls really easy the pineapple is ripe. I favor the smell and and nice yellow color.
- Cut off the top and bottom and reserve.
- Cut off the sides getting most of the brown pits, but don’t get crazy by cutting too deep. Reserve all side pieces.
- Cut pineapple in half. Using the tip of the knife make two angle cuts to remove the core. Reserve the cores.
- Lay pineapple flat side down and make slices about 3/16 thick. Once both halves are cut, place on tray.
- It takes about 24 hours to dry. Turn pieces over after 8-12 hours, rotate trays and pieces as some will dry faster than others. The air movement in the dehydrator is not really even so you just need to watch and learn your dehydrator.
- Once the pinapple or pineapples are cut up, trayed and in the dryer, its time to work with top, bottom, and cores. We waste nothing.
- Using a tablespoon you can scoop out pineapple from the side, a little depending on on how you slice the sides.
- The top and bottom have a lot of pineapple meat and you need to be scooping into a bowl. Your hands more than likely will be affected by the pineapple juices, so light to medium rubber gloves are recommened.
- You can either blend up all the scoopings to make a leather or just eat the scoopings with a spoon, use over ice cream, which ever way it is good stuff.
- The cores have a lot of great tasting meat. Chew them like an ear of corn. You will find you can tell the good soft meat from the real inner tough core. Recommend eating the cores over the sink.
- I haven’t found anything better than pineapple dehydrated, and apricots were a favorite for years.
- My Excalibur dehydrator is the best I have found. I have had two brands and recently bought a second so I could dry more pineapples faster. I usually wait until they are $2.00 to $3.00 each to dehydrate. These pics are from buying 40 pineapples. I cut 8 at a time, one takes about 5 minutes once you get the knack of it. I love my Wusthof 6” sandwich knife for slicing the side and halves.
