Fantastic Chicken

- 1 x whole chicken (free range is best) shopping list
- Portabello or large brown mushrooms cut to thickish pieces shopping list
- 2-3 potatoes, washed not peeled shopping list
- olive oil shopping list
- white wine shopping list
- chicken spices shopping list
- pepper & salt shopping list
How to make it
- Heat the oven 220C or 420F
- Butterfly the chicken (Make it flat)
- Brush whole bird with olive oil
- Half the potatoes
- Heat a oven proof pan with two tbsp of olive oil (Flat black pot works best) on the stove
- Place the bird skinside down in the pot
- Add the potatoes on the sides of the chicken
- Put in heated oven for 10 minutes
- Remove from oven
- Add your favourite spices, pepper & salt to taste
- Turn the bird
- The skinside should be nicely browned by now
- Add some white wine to keep the bird moist
- (Tip: one can also use a commercial flat chicken already spiced)
- Place back in oven for another 30-40 minutes depending on size.
- Remove and place on serving dish and keep warm.
- Place same pot on hot plate and add the mushrooms
- Fry quickly at high heat for a minute or two in the chicken sauce
- Add to serving dish and garnish
- Take care not to damage your finger tips while eating!!
