How to make it

  • Heat the oven 220C or 420F
  • Butterfly the chicken (Make it flat)
  • Brush whole bird with olive oil
  • Half the potatoes
  • Heat a oven proof pan with two tbsp of olive oil (Flat black pot works best) on the stove
  • Place the bird skinside down in the pot
  • Add the potatoes on the sides of the chicken
  • Put in heated oven for 10 minutes
  • Remove from oven
  • Add your favourite spices, pepper & salt to taste
  • Turn the bird
  • The skinside should be nicely browned by now
  • Add some white wine to keep the bird moist
  • (Tip: one can also use a commercial flat chicken already spiced)
  • Place back in oven for another 30-40 minutes depending on size.
  • Remove and place on serving dish and keep warm.
  • Place same pot on hot plate and add the mushrooms
  • Fry quickly at high heat for a minute or two in the chicken sauce
  • Add to serving dish and garnish
  • Take care not to damage your finger tips while eating!!
