Chicken is my favourite meat, and this chicken is really fantastic.

Ingredients
  • 1 x whole chicken (free range is best)
  • Portabello or large brown mushrooms cut to thickish pieces
  • 2-3 Potatoes, washed not peeled
  • Olive oil
  • White wine
  • Chicken Spices
  • Pepper & Salt

Directions
  1. Heat the oven 220C or 420F
  2. Butterfly the chicken (Make it flat)
  3. Brush whole bird with olive oil
  4. Half the potatoes
  5. Heat a oven proof pan with two tbsp of olive oil (Flat black pot works best) on the stove
  6. Place the bird skinside down in the pot
  7. Add the potatoes on the sides of the chicken
  8. Put in heated oven for 10 minutes
  9. Remove from oven
  10. Add your favourite spices, pepper & salt to taste
  11. Turn the bird
  12. The skinside should be nicely browned by now
  13. Add some white wine to keep the bird moist
  14. (Tip: one can also use a commercial flat chicken already spiced)
  15. Place back in oven for another 30-40 minutes depending on size.
  16. Remove and place on serving dish and keep warm.
  17. Place same pot on hot plate and add the mushrooms
  18. Fry quickly at high heat for a minute or two in the chicken sauce
  19. Add to serving dish and garnish
  20. Take care not to damage your finger tips while eating!!
