How to make it

  • Rinse beans. Cover with 6 cups water in a large kettle. Add bell pepper and half the onion. Soak overnight.
  • When ready to cook, add 4 cups water and bring to boiling. Reduce heat. Cover and simmer until beans are tender, about 2 1/2 hours.
  • Meanwhile, mash together in mortar and pestle (or blender or food processor ) he remaining half onion, garlic, oregano, and cumin. Mix in 1 tablespoon of the vinegar.
  • In a small frying pan, saute the onion mixture in tablespoon of the olive oil about 5 minutes or until golden.
  • Stir in remaining 2 tablespoons each oil and vinegar into the onion mixture; then add it to the beans. Add salt.
  • Simmer another 20 minutes just before serving.
  • Spoon over hot rice and serve.

    Added the dry rice directly to the beans at the end and simmered an additional 30 minutes. A good bean recipe.

    My brother-in-law used to throw together a can of black beans and some rice. Surprisingly it was pretty good. That's my limited experience. Your dish is more than on another level ... it sounds great.
