Black Beans and Rice

- 1 lb. black beans shopping list
- 2 1/2 quarts water shopping list
- 1 green pepper, sliced shopping list
- 1 medium white onion, quartered shopping list
- 5 cloves garlic, minced or pressed shopping list
- 1/2 teaspoon dried oregano leaves shopping list
- 1/2 teaspoon cumin shopping list
- 3 tablespoons vinegar shopping list
- 3 tablespoons olive oil shopping list
- 2 to 2 1/2 teaspoons salt shopping list
- 3 cups hot cooked rice shopping list
How to make it
- Rinse beans. Cover with 6 cups water in a large kettle. Add bell pepper and half the onion. Soak overnight.
- When ready to cook, add 4 cups water and bring to boiling. Reduce heat. Cover and simmer until beans are tender, about 2 1/2 hours.
- Meanwhile, mash together in mortar and pestle (or blender or food processor ) he remaining half onion, garlic, oregano, and cumin. Mix in 1 tablespoon of the vinegar.
- In a small frying pan, saute the onion mixture in tablespoon of the olive oil about 5 minutes or until golden.
- Stir in remaining 2 tablespoons each oil and vinegar into the onion mixture; then add it to the beans. Add salt.
- Simmer another 20 minutes just before serving.
- Spoon over hot rice and serve.

Added the dry rice directly to the beans at the end and simmered an additional 30 minutes. A good bean recipe.
