Coffee Chocolate Nutty Sandwich Cookie

- 250 g margarine (1 cup) shopping list
- 5 ml instant coffee (1 teaspoon) shopping list
- 30 ml boiling water (2 tablespoons) shopping list
- 60 ml dark brown sugar (1/4 cup) shopping list
- 250 ml chopped nuts (1 cup) of your choice shopping list
- 375 ml cake flour (1 1/2 cup) shopping list
- 125 ml cocoa (1/2 cup) shopping list
- FILLING: shopping list

- 15 ml margarine (1 tablespoon) shopping list
- 375 ml icing sugar (1 1/2 cup) shopping list
- 15 ml cream cheese (1 tablespoon) shopping list
- 5 ml instant coffee (1 teaspoon) shopping list
- 5 ml warm water (1 teaspoon) shopping list
- small slab dark chocolate, melted shopping list
How to make it
- COOKIE:

- Mix coffee and water together.
- Let it cool down.
- Cream the margarine, coffee and sugar until light and fluffy.
- Mix in the nuts, cocoa and flour.
- Mix very well.
- Put dough in a cookie press.
- Press out the cookie on a greased baking tray.
- Bake for 10 - 15 minutes at 200 deg C (392 deg F).
- Let it cool down totally.
- FILLING:

- Mix the coffee powder and water well.
- Let it cool down totally.
- Cream margarine and icing sugar together with a fork until crumbly and all of the sugar is covered with margarine.
- The amount of margarine seems too little, but it actually mix in quite well.
- Stir in cream cheese.
- Stir in the melted chocolate.
- Stir in the coffee.
- Mix until very well blended.
- Put on flat side of one cookie.
- Put another cookie on top.
- Place in fridge until set.
