Buttered Toasted Pecan Pie

- 1/2 stick unsalted butter shopping list
- 3/4 cup heavy cream shopping list
- 1 cup firmly packed light brown sugar shopping list
- 1/4 teaspoon salt shopping list
- 1/2 cup light corn syrup shopping list
- 1 teaspoon vanilla extract shopping list
- 3 eggs shopping list
- 1-1/2 cups toasted* pecan halves shopping list
- 1 unbaked pie crust shopping list
- *toast pecans in 375 degree oven for 5-10 minutes, stirring 3 times while baking shopping list
How to make it
- In medium saucepan, heat butter over low heat until it turns golden-amber (do not burn)
- Immediately pour cream into butter to stop cooking
- Pour into mixing bowl
- Blend in brown sugar, salt, corn syrup and vanilla
- Beat in eggs *by hand* until well blended (I use whisk)
- Stir in pecans
- Pour into pastry lined 9 inch pie plate (crimp edges of pastry as high as possible)
- Cover edges with strips of aluminum foil
- Bake 30 minutes at 375 degrees
- Remove foil strips and continue baking until filling is set and pastry is golden (about 15 minutes
- Cool at least 2 hours before slicing
- Delicious, and a little different from a regular pecan pie
