Ingredients

1 large onion, sliced thinly

1/2 teaspoon salt

2 tablespoons oil

1 large garlic, minced

4 large potatoes, peeled and sliced

2 large celery stalks, sliced

2 cups chicken broth

1/2 teaspoon pepper

1 cup milk

8 oz sharp cheddar cheese, cubed or shredded

minced parsley

Directions

Cook garlic, onion, celery, and potatoes in oil for 10 minutes; stir often.

Add broth, salt and pepper.

Boil; reduce heat and simmer for 20 minutes.

Stir in milk; heat through; add cheese and parsley.

Makes 4 servings.
