Ingredients

How to make it

  • Mix the cod fish, mashed potatoes and ½ of the garlic mayo.
  • Heat a black iron skillet over medium heat.
  • Form eight cod cakes with your hands.
  • Place the cakes in the skillet and fry until golden in color, flip over and cook the other side.
  • Meanwhile lightly toast slices of bread, coat with remaining garlic mayo.
  • Place a cod cake on top of each slice of bread and season with a bit of lemon juice and parsley.

    You can buy Garlic Mayo...or add a pinch of minced garlic to your favorite mayo and mix. :)

    Sounds soothing and wonderful. I'd love this dish during snowy weather, friends and a good puzzle or game. ---for the garlic mayo, do I just add crushed garlic to mayo?
