How to make it

  • COMBINE SUGAR AND SODA IN 3-QUART SAUCEPANS
  • MIX WELL
  • STIR IN CREAM
  • BRING TO BOIL OVER MEDIUM HEAT, STIRRING CONSTANTLY
  • COOK AND STIR TO SOFT BALL STAGE (234 DEGREES)
  • MIXTURE CARAMELIZES SLIGHTLY AS IT COOKS
  • REMOVE FROM HEAT
  • ADD BUTTER
  • STIR IN PECANS
  • BEAT UNTIL THICK ENOUGH TO DROP FROM SPOON (TAKES 2 TO 3 MINUTES)
  • DROP FROM TABLESPOON ONTO WAXED PAPER
  • IF CANDY BECOMES TOO STIFF, ADD A TABLESPOON HOT WATER
  • MAKES 2 1/2 DOZEN

    I had never had pralines until last year when I visited St. Augustine. There was a candy shop there that let you sample their homemade ones...I fell in love with them (unfortunately)...I can't remember the name of the shop...but I am going to try and make these!!! I LOVE really good PRALINES!!!
