Ingredients
  • 2 CUPS SUGAR
  • 3/4 TSP SODA
  • 1 TSP BUTTER
  • 1 CUP LIGHT CREAM
  • 2 CUPS PECAN HALVES

Directions
  1. COMBINE SUGAR AND SODA IN 3-QUART SAUCEPANS
  2. MIX WELL
  3. STIR IN CREAM
  4. BRING TO BOIL OVER MEDIUM HEAT, STIRRING CONSTANTLY
  5. COOK AND STIR TO SOFT BALL STAGE (234 DEGREES)
  6. MIXTURE CARAMELIZES SLIGHTLY AS IT COOKS
  7. REMOVE FROM HEAT
  8. ADD BUTTER
  9. STIR IN PECANS
  10. BEAT UNTIL THICK ENOUGH TO DROP FROM SPOON (TAKES 2 TO 3 MINUTES)
  11. DROP FROM TABLESPOON ONTO WAXED PAPER
  12. IF CANDY BECOMES TOO STIFF, ADD A TABLESPOON HOT WATER
  13. MAKES 2 1/2 DOZEN

I had never had pralines until last year when I visited St. Augustine. There was a candy shop there that let you sample their homemade ones...I fell in love with them (unfortunately)...I can't remember the name of the shop...but I am going to try and make these!!! I LOVE really good PRALINES!!!
