Ingredients

4 oz Cream cheese, softened

3 1/2 cups Confectioner's sugar

1/8 - 1/4 t Peppermint flavoring

Food coloring as desired (red, green, yellow)

3/4 Granulated sugar

Directions

Cream the cream cheese, confectioner's sugar and peppermint flavoring in a large bowl. Don't even think of using a mixer!

Divide into as many portions as you want colors.

Add one drop (but I always do more) of color to each portion and knead well. I keep my bowl of confectioner's sugar next to my kneading bowl and dip into it as needed to get a nice solid consistency and color.

Pinch off pieces and roll into 1/2 inch balls. I like to vary the size so there is a selection from small (for those who say they are dieting) to large.

Roll the balls in the granulated sugar and place on waxed paper or a silicone sheet (my preference).

Press down with a fork or flatten with the bottom of a glass. You could use molds if you have them for fancy shapes.

Chill. I place mine in the freezer for about 5-10 minutes then transfer to an airtight container.

Keep in the refrigerator but do not freeze.
