How to make it

  • Cream the cream cheese, confectioner's sugar and peppermint flavoring in a large bowl. Don't even think of using a mixer!
  • Divide into as many portions as you want colors.
  • Add one drop (but I always do more) of color to each portion and knead well. I keep my bowl of confectioner's sugar next to my kneading bowl and dip into it as needed to get a nice solid consistency and color.
  • Pinch off pieces and roll into 1/2 inch balls. I like to vary the size so there is a selection from small (for those who say they are dieting) to large.
  • Roll the balls in the granulated sugar and place on waxed paper or a silicone sheet (my preference).
  • Press down with a fork or flatten with the bottom of a glass. You could use molds if you have them for fancy shapes.
  • Chill. I place mine in the freezer for about 5-10 minutes then transfer to an airtight container.
  • Keep in the refrigerator but do not freeze.
