Rhubarb Cake Recipe

Ingredients

1 cup sour cream

1 cup sugar

1 egg

1½ cups flour

½ tsp salt

1 tsp baking soda

2 cups rhubarb, cut into ¼ " pieces

Topping:

½ cup brown sugar

½ cup chopped nuts

1 tsp ground cinnamon

Directions

Preheat oven to 350ºF.

Combine sour cream, sugar and egg; mix thoroughly.

Add dry ingredients; mix well.

Fold in rhubarb.

Pour batter into a 9" x 13" baking pan coated with cooking spray.

Combine topping ingredients and sprinkle evenly over batter.

Bake 30 minutes or until tested done.
