How to make it

  • Preheat oven to 350ºF.
  • Combine sour cream, sugar and egg; mix thoroughly.
  • Add dry ingredients; mix well.
  • Fold in rhubarb.
  • Pour batter into a 9" x 13" baking pan coated with cooking spray.
  • Combine topping ingredients and sprinkle evenly over batter.
  • Bake 30 minutes or until tested done.

    Rhubarb is fantastic!! How fun to find a recipe that isn't pie or a compote of some sort. I made strawberry rhubarb jam last year and it came out very YUM!

    I love the moistness that sour cream gives cake - I will have to try this...I love rhubarb (wish it had a longer season!).

    We used to have rhubarb growing wild in our yard as a kid. Loved eating it with just sugar on it. Must give this a try.
