Jeans Buffalo Chicken Lasagna

- 12 pieces lasagna noodles shopping list
- 1 lb skinless, boneless chicken breasts, diced bite sized shopping list
- 1 tbsp cooking oil or cooking spray shopping list
- 4 cups spaghetti sauce shopping list
- 1 1/2 cups water shopping list
- 2 or 3 tbsp hot pepper sauce (or more, to taste) shopping list
- 2 tbsp cider vinegar shopping list
- 1 tsp garlic powder shopping list
- 16 oz container ricotta cheese shopping list
- 2 large eggs, beaten (or 1/2 cup egg substitute) shopping list
- 1 cup blue cheese, crumbled shopping list
- 1 cup mozzarella cheese, shredded shopping list
How to make it
- Saute chicken pieces in vegetable oil or cooking spray for about 4 minutes. Drain well.
- Stir in spaghetti sauce, water, hot pepper sauce, vinegar and garlic powder.
- In a bowl, combine ricotta cheese and egg. Set aside.
- Spray 9 x 13 pan with cooking spray. Preheat oven to 350 F.
- Spread 1 cup of sauce over bottom of pan. Arrange 4 pieces of lasagna noodles (3 lengthwise, 1 widthwise) over the sauce. Cover with 1 1/2 cups of sauce. Spread half of the ricotta mixture on top. Arrange another 4 pieces of noodles over ricotta and top with another 1 1/2 cups of sauce. Spread the remaining ricotta mixture over the top. Arrange the final 4 pieces of lasagna over the ricotta mixture and cover with remaining sauce.
- Cover lasagna with foil and bake for 1 hour and 10 minutes. Uncover lasagna, sprinkle with blue and mozzarella cheeses, and bake an additional 5 minutes uncovered. Let stand 15 minutes, covered before serving.
