How to make it

  • Preheat the oven to 400 degrees F.
  • Lay the asparagus on a foil-lined baking sheet. Drizzle with olive oil. Sprinkle with rosemary, salt, and pepper. Roast until cooked and starting to brown around the edges, about 10 minutes. Remove from the oven and transfer to another baking sheet to cool.
  • Once the asparagus have cooled, wrap each spear in a slice of smoked salmon. Arrange on a serving platter and serve at room temperature

    I didn't know there was a particular season for asparagus; where I live it's always in and this looks like a great appetizer.. which I just may try this week!! Thanks for the idea...

    Hi Caramia... Wow, you must think I don't like your wonderful asparagus wrapped in smoked salmon. I re-read my comment and it looks like I'm saying that I prefer smoked salmon slices wrapped over pancetta or bacon. Sheesh... I meant to say that I prefer your recipe and I prefer your recipe more than I do the other way. My goodness, I really turned that one around didn't I.     I agree, I've done this with smoked prosciutto not smoked salmon, I'm actually smoking salmon today in my smoker, but it's for dip. I will save this for next time, yummo!
