This is not your grandmother's corn bread. I found it many years ago and it has always had the best texture -- moist, sweet - melt-in-your-mouth good.

Try using buttermilk instead of regular milk for a lighter fluffier cake. It counteracts the heaviness honey tends to create in baked goods. I learned this from a long lost recipe.

I don't care much for sweet cornbread but my hubby loves it. I'll have to make this for him for sure. Thanks for sharing, it sounds really good. I live in IL and the only way they make cornbread here is sweet. Being from the South, I am not used to it, lol.

It's more honey-sweet than sugar-sweet, if that makes sense, so it's not overpowering. Give it a try when you make it for hubby.

I can't guess whether it was slight variences in ingredient qualities, the not quite accurate temperatured gas oven here, the buttermilk or what, but while it tasted great, it didn't cook quite right. The batter seemed too liquid, and I had to cook it 30 minutes to get it done. When done, it tasted wonderful, but had the strangest springy texture to it. My roommate here had only had corn bread once (it doesn't seem a known food here in Australia) and thought he hated the stuff. He loved this recipe and happily finished off the leftovers for his breakfast the next morning.

LOL -- well, I'm guessing all those different factor played into the differences. Never had mine get too liquid before. Glad it worked for you. I might have to try buttermilk next time.

Edensong - This sounds delicious. We are honey-lovers in New Zealand (and it is a product I missed a lot during the five years I lived in the US). What sort of honey works best with this corn bread? My favorite honeys are pohutakawa (it has a salty aftertaste because the pohutakawa tree is typically situated along cliffs) and rewarewa (it has the aroma of butterscotch).

I made this recipe tonight and served it with chili. The slight sweetness was a nice compliment to the spices in the chili. Here in Brazil, they are accustomed to a cornmeal cake, which is much sweeter than the cornbread, but everyone liked the cornbread. I like the fact that cornbread can be stirred up quickly in one bowl, and bakes in only 20 minutes. I made it while the chili was simmering.

I made this today. I thought the batter was a little on the soupy side, judging from the other cornbread recipes I have made. But the bread turned out a very light brown at 20 minutes. I added 5 more minutes for more coloration but removed it from the oven after 2 minutes extra.
Will have to get back to you on the taste. I buried a couple of pieces under a multi-bean recipe to soak up the soup, which camoflaged the bread taste.

Yum..so good! I served this with Lilliancooks Easy Chicken Chili, and they were perfect together. I did drizzle some honey over the top of the batter before I baked as we like our cornbread pretty sweet and it was delicious! Thanks Edensong for a great cornbread!
