I got this recipe from my husbands co worker years ago. It's one of my favorites. It takes awhile before you can actually eat it, but it's well worth the wait!

  • Filling
  • 2 1/2 lbs of cream cheese (5-8 ounce packs)
  • 1 3/4 cups sugar
  • 3 eggs
  • 1/2 cup cocoa
  • 1/2 cup hot water
  • 1 tsp vanilla
  • Crust
  • 2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 stick butter(1/4 cup)
  • Topping
  • 2 egg yolks
  • 1/2 cup sugar
  • 1/2 cup evaporated milk
  • 1/2 stick of butter(1/4 cup)
  • 2/3 cup coconut
  • 1/2 cup pecan pieces
  • 1 tsp. vanilla

Directions
  1. Filling:
  2. Mix cream cheese at medium speed until soft.
  3. Add sugar, mix well, then add eggs one at a time.
  4. In a seperate bowl mix cocoa and hot water to a smooth consistency;
  5. set aside.
  6. Crust:
  7. Mix graham cracker crumbs and sugar together.
  8. Melt butter and add to crumbs.
  9. Press this into bottom and sides of 10 inch springform pan that has been greased.
  10. Pour filling into pan.
  11. Bake at 350* for 75 minutes.
  12. Let cool in oven slowly with door cracked open for an hour.
  13. When cake is cooled to room temperature add topping
  14. Topping:
  15. Mix egg yolks and sugar together in small saucepan.
  16. Add milk and butter
  17. Cook on medium heat until it thickens(about 6-8 min)
  18. Remove from heat and add coconut, nuts and vanilla.
  19. Occasionally beat mixture with spon until cool.
  20. Spread over cake and refrigerate several hours.

The topping on this cheesecake really puts it WAY at the top of the "delicious" index...I have to try this one for company - would be very impressive, I'm sure.

Hey Michelle!
Hope you are well. I was looking for a dessert to take to a teacher luncheon (something our PTO does for our teachers) with a German theme. This is great! I'll let you know how it turns out. I haven't been spinning in a couple of weeks. The gym was closed for over a week after Ike, and there is still a lot to be cleaned up around here. I got my garden planted yesterday and we finally had the tree that fell on our fence and all the other mess picked up this weekend. We were w/out power for 11 days. It was warm and a bit stressful. I am looking forward to getting back to normal and getting back to spinning.

Alterations


I got confused on the cocoa and hot water...when do you add it (I added it to the topping), but still had great reviews on this dish. It was my 1st cheesecake attempt, and I think it did well. I didn't get to try it, but I broke off a small bite of the cake and my daughter offered to do the dishes for dinner if she could like the spoon from the topping. One of the teachers told me that she doesn't like coconut, but she loved this dessert! Thanks for this recipe!!! Talk to you soon.
