Ingredients
  • 3 tbs. olive oil
  • 7 cups boiling water
  • 2 cups coarse-ground cornmeal
  • 2 cloves garlic, peeled
  • 1 small onion, minced
  • 4 links sweet Italian sausage,cut into bite-size pieces
  • 1 red bell pepper, cut into bite-size pieces
  • 2 cans chickpeas, drained
  • 2 tsp. salt
  • 1 tsp. freshly ground black pepper

Directions
  1. Use 1 tbs. of olive oil to grease the sides of slow cooker.
  2. Add water, and then remaining ingredients.
  3. Stir and cook on low for 6 to 8 hours.
