Old Southern Baked Chicken Salad Recipe
Baked chicken salad was very popular in the South in the late 50's, 60's, and 70's. It was served at bridge parties, luncheons, church dinners, and graced the table in family homes, where families sat down and ate together every day! Delicious.

Ingredients
  • 2 cups cooked chicken, torn into medium pieces
  • 2 cups celery, diced
  • 2 tablespoons green pepper, diced
  • 1 tablespoon onion, grated
  • 2 tablespoons pimiento, diced
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 3/4 cup mayonnaise
  • ! cup grated cheese
  • 2 slices bread, crumbled

Directions
  1. Combine all ingredients in large bowl, except bread and cheese
  2. Spoon into a buttered 2 quart casserole
  3. Sprinkle with cheese and bread crumbs
  4. Bake at 350 degrees for 25 minutes, or until cheese is melted
