How to make it

  • If pre-cooked lasagna noodles are used, no further preparation is necessary for the pasta.
  • *Bechamelle Sauce*
  • in a sauce pan, melt butter completely.
  • add flour until all the butter has been absorbed (approx 6 Tbs).
  • add milk SLOWLY until a smooth sauce is formed (important - not too thick).
  • keep stiring all the time. set aside for later.
  • *Meat Sauce*
  • chop onion, garlic, celery and carrots. in a large pan, saute with olive oil until soft and golden.
  • add meats and saute until well cooked
  • add red wine and reduce.
  • add tomato paste - mix well.
  • add chicken broth and boullion cubes. bring to a boil. if not enough liquid, add water and cover.
  • simmer atleast ONE hour until the broth has reduced. set aside.
  • *Construct the Lasagna*
  • spray large baking dish with cooking spray ("Pam").
  • (A) layer pasta to cover the bottom
  • (B) add a layer of meat sauce
  • (C) add a layer of Bechamelle
  • (D) add a layer of cheese(s)
  • repeat layers, finishing with cheese & Bechamelle on top
  • cover with foil and bake for 1hr at 375 deg.
  • remove foil and brown the top layer under the broiler.
  • let rest for atleast 10min. serve!

Outstanding! I've been looking for a good Tuscan lasagna recipe since losing my tried and true one. We lived in Tuscany for a while and my son loved our landlady's lasagna and begs me to make it. He won't touch the ricotta kind. I made this one day and waited until the next day to bake it, givingt the flavors time to settle and mingle. Delicious!

I made this last night for my grand-daughter and all I can say is O U T S T A N D I N G !!! I wasn't to sure about the pork sausage at first but it was great. My grand-daughter went back for seconds and by the time she was done she had this glazed look in her eyes but she was happy. Wonderful recipe, I gave it a 5.
