MIKES FAVORITE SHRIMP AND GRITS

- 1 cup course ground yellow harina (I like No. 16 grind) shopping list
- 4 cups water shopping list
- 1 tsp salt shopping list
- ¼-½ tsp ground black pepper. shopping list
- 1½ cups grated extra sharp cheddar cheese shopping list
- 2 Tbsp butter (lightly salted is OK) shopping list
- 2 Tbsp olive oil shopping list
- 2 lbs shrimp, 16-20 count, peeled and de-veined shopping list
- ½ cup sweet onion, finely chopped shopping list
- 1 clove garlic, minced shopping list
- 1 tsp parsley, chopped shopping list
- salt and black pepper to taste shopping list
How to make it
- Note: I like to use very coarsely ground yellow harina in place of hominy grits. You can use hominy grits or quick grits in this recipe.
- Place 1 cup harina and 4 cups cold water in a large, heavy sauce pan, add 1 tsp salt and ¼-½ tsp ground black pepper.
- Heat on medium high to a rapid boil.
- Reduce heat and simmer until thick. Stir frequently to avoid sticking.
- Add grated cheese to hot grits and stir vigorously until cheese is melted and grits appear creamy.
- Prepare shrimp while grits are cooking.
- Place olive oil and butter in a heavy skillet and heat on medium until butter sizzles.
- Add onion and sauté until tender.
- Add shrimp, garlic and parsley. Season the shrimp with salt and black pepper.
- Sauté until shrimp just turn pink. Remove from heat and drain excess grease.
- When grits and cheese are complete, add prepared shrimp to the pot and mix.
- Serve hot with buttered cornbread muffins.
- Note: For an added treat, slice 1 lb of hot smoked sausage and sauté with shrimp. Be sure to drain the extra grease added by the sausage before mixing with grits.

I'm not southern, but I LOVE my shrimp n grits! Tried them my first trip to SC 3 years ago and have been addicted ever since. I've even been transformed into craving cheese grits for breakfast! Sounds great. Thanks.
