Ingredients

1 boneeless beef roast (sirloin tip, eye of round) about 4#'s

2 slices of bacon,cut into thin strips

2 lasge onions,chopped

1 large carrot, diced

1 cup diced celery

8 pepper corns

4 whole alspice

1 large or 2 small bay leafs

1/4 tsp. thyme

1 tsp. salt

red wine vinegar and water

2 Tbs. flour

2 cups sour cream

Directions

Push a knife through roast, several times. use a larding needle and lard roast with the bacon,tie roast with srting and place in a crock or kettle.add everything except flour and sour cream

cover with equal parts of vinegar and water,marinate for 24 hours,turning several times

spoon vegetables into a baking dish and place meat on top, add liquid

in a preheated oven at 325*F. roast for about 35-40 minutes per pound, to desired doneness

remove roast from pan and cover to keep warm

strain liquids and put into a sauce pan, stir in flour with a whisk,cook slowly,stirring until thickened, stir in sour cream and heat through,don't boil

slice meat and serve covered with sauce.

this meat has a plesant sweet-sour taste.
