Ingredients
  • 1 boneeless beef roast (sirloin tip, eye of round) about 4#'s
  • 2 slices of bacon,cut into thin strips
  • 2 lasge onions,chopped
  • 1 large carrot, diced
  • 1 cup diced celery
  • 8 pepper corns
  • 4 whole alspice
  • 1 large or 2 small bay leafs
  • 1/4 tsp. thyme
  • 1 tsp. salt
  • red wine vinegar and water
  • 2 Tbs. flour
  • 2 cups sour cream

Directions
  1. Push a knife through roast, several times. use a larding needle and lard roast with the bacon,tie roast with srting and place in a crock or kettle.add everything except flour and sour cream
  2. cover with equal parts of vinegar and water,marinate for 24 hours,turning several times
  3. spoon vegetables into a baking dish and place meat on top, add liquid
  4. in a preheated oven at 325*F. roast for about 35-40 minutes per pound, to desired doneness
  5. remove roast from pan and cover to keep warm
  6. strain liquids and put into a sauce pan, stir in flour with a whisk,cook slowly,stirring until thickened, stir in sour cream and heat through,don't boil
  7. slice meat and serve covered with sauce.
  8. this meat has a plesant sweet-sour taste.
