How to make it

  • Push a knife through roast, several times. use a larding needle and lard roast with the bacon,tie roast with srting and place in a crock or kettle.add everything except flour and sour cream
  • cover with equal parts of vinegar and water,marinate for 24 hours,turning several times
  • spoon vegetables into a baking dish and place meat on top, add liquid
  • in a preheated oven at 325*F. roast for about 35-40 minutes per pound, to desired doneness
  • remove roast from pan and cover to keep warm
  • strain liquids and put into a sauce pan, stir in flour with a whisk,cook slowly,stirring until thickened, stir in sour cream and heat through,don't boil
  • slice meat and serve covered with sauce.
  • this meat has a plesant sweet-sour taste.
