Mayo Spreads Recipe
I made a Panini recipe book for my daughter to go with the panini grill I got her. I included several spreads so she could jazz up her panini.

Ingredients
  • Caesar Dressing
  • 2 C. mayo
  • 1 T. roasted garlic
  • 1-½ tsp. minced garlic
  • 1 T. anchovy paste (optional)
  • 1 T. Dijon mustard
  • 1 T. extra-virgin olive oil
  • ½ tsp. white miso paste
  • 1/8 tsp. sea salt
  • 1 tsp. minced parsley
  • Combine all ingredients for the dressing in a large bowl and blend well. Refrigerate until ready to use. Makes about 2 ½ cups
  • Horseradish-Mayo Dipping Sauce
  • 1/3 C. mayo
  • 2 T. prepared horseradish
  • 2 T. chopped chives
  • In a small bowl stir together all ingredients. Refrigerate until ready to use. Makes 1/2 cup
  • Spicy Remoulade Mayo or Dip
  • 1 C. mayo
  • 2/3 C. salsa
  • ¼ C. sweet pickle relish
  • 1 tsp honey mustard
  • 1 T. prepared horseradish
  • Combine all ingredients and mix well. Refrigerate until ready to use. Makes 2 cups
  • Chipotle Mayonnaise Recipe
  • Quick and easy spicy mayonnaise.
  • ¾ C. low-fat mayonnaise
  • 1 T. chipotle chiles in adobo, finely chopped
  • 1 T. fresh cilantro, chopped
  • 1 ½ tsp. fresh lime juice
  • Mix the mayonnaise, chipotles, cilantro, and lime juice until well blended. Allow
  • flavors to blend before using. Refrigerate until ready to use. Makes about 1 cup.
  • Curried Mayonnaise Spread
  • 1/4 c Mayonnaise
  • 1 tsp. Mild Indian curry powder.
  • Stir to combine - enough for 8 slices of bread. Curry is a nice flavor accompaniment with beef, chicken, lamb, shrimp and vegetables. Refrigerate until ready to use. Makes ¼ cup.
  • Mayo Spread
  • 1/4 C. Real Mayonnaise
  • 1/4 tsp. Celery salt.
  • 1/4 tsp. Onion powder
  • Stir to combine. Mayo Spread will enhance the flavor of most foods except sweets. Especially good on sandwiches with eggs, cheese, Ham and seafood or Vegetable pockets. Refrigerate until ready to use. Makes ¼ cup.
  • Creole Mustard
  • ¼ C. mayo
  • 1 T. green onions, chopped fine
  • 1 tsp. dried parsley flakes
  • 2 tsp. sweet pickle relish
  • 2 tsp. yellow mustard
  • ¼ tsp. creole seasoning
  • 1/8 tsp hot sauce (more or less, depending on how hot you'd like it)
  • Combine all ingredients and mix well. Refrigerate until ready to use. Makes about ½ cup.
  • Roasted Garlic Mayonnaise
  • 12 garlic cloves
  • 1 T. veg. oil
  • 1 T. fresh lemon juice
  • 1 tsp Worcestershire sauce
  • 1 C. mayo
  • ¼ C. chopped fresh parsley
  • ¼ C. chopped fresh basil
  • Place garlic and oil in small baking dish; stir well. Bake at 300F for 30 min or until garlic is soft and golden. Cool to room temp. Place garlic, lemon juice, and Worcestershire sauce in container of blender. Process until smooth. Add mayo and remaining ingredients, process until smooth. Refrigerate until ready to use. Makes 1 cup

Directions
  1. Use on your sandwiches.
