This added a nice change to skillet prepared fish. Very easy and tasty. It was written for talapia, but I used speckled trout, which is a little strong fish. Nice offset of flavors.

Sounds great. Next time why not try it only with olive oil. Much healthier and olive oil is so tasty.

Sounds great, I like the little hint of mixing butter with the olive oil, I first saw that on a cooking show on TV and loved it when I tried it. This is a great post, I'll try making this next time I do fish which is pretty often.
