How to make it

  • In large bowl mix cucumbers, onions and salt.
  • Cover with crushed ice and allow to stand covered with a weighted lid for 3 hours.
  • Drain completely.
  • Place cucumber mixture in a large canning pot.
  • Add sugar, spices and vinegar and bring almost to a boil stirring constantly with wooden spoon.
  • Pack pickles into hot jars and seal.

    I used this recipe as a base for my bread and butter pickles I made this year. I adjusted the ratios to accommodate making 12 quarts at a time, and added coriander. I have never had better pickles in my life! The other thing I changed about this recipe is the crushed ice part. Instead, I soaked (shocked) the sliced cucumbers in an ice bath while heating up the vinegar/sugar/spice mixture. They came out extra crunchy after being in the ice bath for less than 10 minutes. Excellent recipe. I will be posting my version soon! Thanks!

    Oh I just love home made B & B pickles. Just awesome with pinto beans. I have never attempted to make pickles but my sister is really good at it.
