Ingredients

How to make it

  • Clean calamari. Slice in 1/4 inch strips. Halve tentacles or leave whole as you wish.
  • Wash scallops.
  • Clean crab.
  • Clean and rinse shrimps.
  • Heat pot of boiling salted water.
  • Cook shrimp in boiling water about two minutes, or until pink. Transfer to ice water bowl.
  • Cook scallops and simmer about 2 minutes or till cooked. Transfer to ice bath with shrimps.
  • Add calamari to boiling water. Cook about 1 minute. Transfer to ice water immediately.
  • Drain seafood well. Transfer to bowl. Add crab.
  • Chill covered until well chilled about 3 hours.
  • Dressing: Combine oil and lemon juice. Shake well.
  • Add parsley, green onions, rosemary, olives and tomatoes.
  • Toss well. Adjust for taste.
  • Serve with bread and cold dry wine on a nice warm day.

    Great post
    Shocking the calamari in an ice bath is essential step as you know calamari is unforgiving and will get tough if over cooked even a little. I love the heat too.

    This sounds like the seafood antipasto I had years ago in Sardinia in the town of Palau at an outdoor cafe. Add some arugula, maybe sundried tomatoes... you are there.. thanks for the post.
