Orange - Sherry Chicken Recipe
This is a quick preparation dinner. The sherry is a nice offset to the fruitiness of the orange. Throw it in the oven when you get home. Get on the web and check for your next meal... hehehe.

Ingredients
  • Cup of rice. Which ever makes your heart beat faster.... white, brown...etc.
  • 1/4 Cup sherry
  • 3/4 Cup of orange juice
  • 1 Can Cream of Mushroom soup
  • 1/2 Pouch, Lipton onion soup mix.
  • Chicken: 4 to 6 Breast or Leg/thigh quarters (my preference)
  • 1/2 to 1 lb of slice mushrooms
  • Seasons to taste.

Directions
  1. Preheat oven to 350 F
  2. Place rice in bottom of a baking dish
  3. Season the chicken to your taste, then place over the rice.
  4. Cover chicken with mushrooms
  5. Mix the orange juice, sherry, and mushroom soup and pour over the mushrooms and chicken.
  6. Sprinkle 1/2 the package of Lipton onion soup mix over this.
  7. Cover and bake at 350 F for 1hr 30 min.
  8. Uncover, bake for an additional 10 min.

HOW EASY WAS THIS!!!! I admit being a little skeptical that the rice would not come out right. I followed directions and EVERYTHING was perfect! I used boneless, skinless thighs for "more" flavor. A perfect,easy, one pot meal. Cheers, clark
