Olive Salad For Muffaletta Recipe

Ingredients

2 1/2 C. pimento-stuffed olives

1 C. pitted Kalamata olives

1 C. giardiniera (Italian pickled vegetables)

1/2 C. pepperoncini

1/2 C. pickled onions

2 T. capers

2 clove garlic, large – minced

1 1/2 T. oregano

1 1/2 T. celery seed

1/2 tsp ground pepper

1 T. lemon juice

1/4 c olive oil

Directions

Drain all ingredients. Place all ingredients in a food processor and pulse until coarsely chopped. Store tightly covered in refrigerator. Allow to marinate for at least 24 hours before using. Mixture will keep for several months sealed in a glass jar in the refrigerator.
