Cheesy Baked Potato Surprise Recipe

Ingredients

8 medium potatoes,peeled and sliced

2 large onions

4 TBSP butter, divided

16 ounces of fresh sliced mushrooms

2 cups small curd cottage cheese.

1/2 cup sour cream

2 cups shredded cheddar cheese divided

2 tsp dried thyme

2 tsp. salt

1 tsp. black pepper

Directions

Place potatoes in pan of hot water and boil just until tender, drain.

Saute onions in 2 TBSP butter. remove onions leave the butter in the pan and saute mushrooms. drain mushrooms.

Preheat oven to 350 degrees. Spray a 13x9 inch baking dish with Pam.

Combine cottage cheese, sour cream, and 1 1/2 cups of cheese in bowl.

Layer potatoes, onions, mushrooms, and cottage cheese mixture in baking dish. Sprinkle each layer with thyme,salt and pepper. Sprinkle remaining cheese ontop of potatoes. Bake about 30 minutes.
