How to make it

  • Prepare the box of couscous according to the package directions, omitting the butter or oil; let cool 10 minutes.
  • Stir in the rest of the ingredients.
  • Transfer to serving platter and garnish with ΒΌ cup chopped smoked salted almonds.

    I love black beans and rice, so putting this with couscous should be a winner. I'm not sure about the papaya, as I'm not too crazy about it, but it is worth trying. I look forward to it.
