Ingredients

1 Box of "Near East" Whole Wheat Couscous

1 15oz. Can of Black Beans (drained and rinsed)

1 C. Diced Papaya

1 C. Shredded Spinach Leaves

1 Minced Scallion

2 T. Lime Juice

2 T. Olive Oil

1/2 tsp. Ground Cumin

1/4 tsp. Salt

1/8 tsp. Cayenne pepper

Directions

Prepare the box of couscous according to the package directions, omitting the butter or oil; let cool 10 minutes.

Stir in the rest of the ingredients.

Transfer to serving platter and garnish with ¼ cup chopped smoked salted almonds.

I love black beans and rice, so putting this with couscous should be a winner. I'm not sure about the papaya, as I'm not too crazy about it, but it is worth trying. I look forward to it.
