Pear buter is so good on so many things. I love it on hot buttered raisin bread toast.

Ingredients
  • 10 Large Ripe Pears (About 5 Pounds) -- quartered and cored
  • 1 Cup Water
  • 2 Cups Sugar
  • 1/2 Teaspoon Grated Orange Rind
  • 3 Tablespoons Orange Juice
  • 1/4 Teaspoon Ground Nutmeg

Directions
  1. Combine pears and water in a large Dutch Oven.
  2. Cover and cook over medium-low
  3. heat 40 minutes or until pears are soft, stirring occasionally.
  4. Drain.
  5. Press pears through a sieve or food mill, measure 1 quart of puree.
  6. Combine 1 quart puree with remaining ingredients in a Dutch Oven. Cook over medium heat, stirring frequently, for 15 minutes or until mixture thickens.
  7. Remove from heat; skim off foam. Quickly pour hot pear mixture into hot sterilized jars, leaving 1/4 inch headspace, wipe jar rims.
  8. Cover at once with metal lids, and screw on bands.
  9. Process in boiling-water bath 5 minutes.
