Classic French Onion Soup Recipe

Ingredients

1 kg of finely chopped onions

3 garlic cloves crushed

100-150 gr of good quality butter

tablespn of fresh sage chopped finely

tablespn of fresh thyme as above

1 large glass of dry white wine

3 bay leaves

1-1.5t litres of good beef stock

salt n pepper to taste

Directions

Melt butter in a heavy bottomed saucepan and add onions-stew on a medium high heat for 10/15 mins or until onions are clear-keep stirring occasionally -careful NOT to burn

add garlic and herbs. lower heat and stew for another 20 mins stirring to ensure it isn't buring or sticking to bottom

turn up heat for a moment and add wine until it has reduced by 50 percent. Add hot stock and turn down heat -simmer for another 30 mins

Salt and pepper to taste
