Classic French Onion Soup

- 1 kg of finely chopped onions shopping list
- 3 garlic cloves crushed shopping list
- 100-150 gr of good quality butter shopping list
- tablespn of fresh sage chopped finely shopping list
- tablespn of fresh thyme as above shopping list
- 1 large glass of dry white wine shopping list
- 3 bay leaves shopping list
- 1-1.5t litres of good beef stock shopping list
- salt n pepper to taste shopping list
How to make it
- Melt butter in a heavy bottomed saucepan and add onions-stew on a medium high heat for 10/15 mins or until onions are clear-keep stirring occasionally -careful NOT to burn
- add garlic and herbs. lower heat and stew for another 20 mins stirring to ensure it isn't buring or sticking to bottom
- turn up heat for a moment and add wine until it has reduced by 50 percent. Add hot stock and turn down heat -simmer for another 30 mins
- Salt and pepper to taste
