How to make it

  • Melt butter in a heavy bottomed saucepan and add onions-stew on a medium high heat for 10/15 mins or until onions are clear-keep stirring occasionally -careful NOT to burn
  • add garlic and herbs. lower heat and stew for another 20 mins stirring to ensure it isn't buring or sticking to bottom
  • turn up heat for a moment and add wine until it has reduced by 50 percent. Add hot stock and turn down heat -simmer for another 30 mins
  • Salt and pepper to taste
