How to make it

  • Heat oil in saucepan, toss in shrimp and cook for 5 min. Stir constantly.
  • Now pour in pineapple juice, add ground ginger, pepper cut in strips, vinegar, sugar, salt and soy sauce. Cook over low fire for 2 min.
  • Spoon out a little of the liquid and mix with the cornstarch until you have a smooth paste.
  • Pour back into meta mixture and cook slowly, stirring constantly until the liquid is transparent and slightly tic.
  • Serve with fluffy, pipping hot rice.
