I used celery soup instead of mushroom, added 1/3 cup chopped mushrooms (sauteed a bit with the onion), 1 tsp dried basil, and a light dash of thyme.

Is Ro-Tel just a can of tomatoes or is it a sauce?
qtpie 1 year, 10 months ago said:
Michelle73, Ro-Tel is combination of diced tomatoes and green chiles.

When I made this before, it always seemed tasteless, but with the added soup and a dab of seasoning, it was delicious. My husband loved it! Thanks!

I made this again this weekend and accidently bought chili starter Ro-tel. I didn't even know they made such. Anyway, we had company and I had no choice but to use it. It was really really good. It gave a spicier more Mexican flavor and everyone praised it.
