Greek Pork with Feta and Greek Yogurt

- 1 1/2 lbs boneless pork shopping list
- 1 tsp dried oregano shopping list
- 2 tsp thyme shopping list
- 4 pita breads shopping list
- 4 TB Greek yogurt shopping list
- 4 oz feta shopping list
- 1 lemon, quartered shopping list
- marinade shopping list
- 2 crushed garlic cloves shopping list
- 2 TB olive oil shopping list
- 1/2 tsp oregano shopping list
- 1 TB lemon juice shopping list
- sea salt and pepper shopping list
How to make it
- Slice the pork finely but roughly at different angles.
- Mix all the ingredients for the marinade, add the pork, turn to coat, and let marinade until ready to cook.
- Heat a nonstick fry pan and sear the pork over hight heat, tossing it in the pan until crisped on the edges, but still a little pink inside.
- Add the oregano and thyme, and toss well.
- Heat the bread in a warm oven or dry frying pan for 3 minutes.
- Place a pita on each plate.
- Add a spoonful of yogurt, pile the pork on top, and scatter the feta over.
- Serve with lemon quarters for squeezing over.
