Saltys Best Hushpuppies

- 1½ cups corn meal shopping list
- ½ cup flour shopping list
- 1 Tbsp sugar shopping list
- 2 tsp baking soda shopping list
- 2 tsp salt shopping list
- 1 Tbsp onion, finely minced shopping list
- 1 egg shopping list
- 1 cup buttermilk shopping list
- 1 Tbsp bacon drippings shopping list
- 4 Tbsp ice water shopping list
How to make it
- Sift together corn meal, flour, sugar, soda and salt.
- Place onion in a small bowl. Add egg, buttermilk and bacon drippings and beat until frothy.
- Pour all at once into the corn meal mixture and stir lightly to mix.
- Add ice water 1 Tbsp at a time and mix until the dough will drop from the spoon but is not “runny.”
- Drop by tablespoonfuls into hot oil (about 350 to 360°) in deep fat fryer for about 2 minutes or until evenly browned, turning to keep all sides evenly browned.
- Note: If you have never cooked hushpuppies before, remember to turn them often, even in a deep fryer. If allowed to brown on bottom first, the hushpuppies will become “bottom heavy” and will not easily turn, resulting undercooking on the top.

This is a great, great recipe!! The addition of the sugar is fabulous. Of course, the buttermilk also makes them fabulous. Does something different....just the right combination! :)
