How to make it

  • Sift together corn meal, flour, sugar, soda and salt.
  • Place onion in a small bowl. Add egg, buttermilk and bacon drippings and beat until frothy.
  • Pour all at once into the corn meal mixture and stir lightly to mix.
  • Add ice water 1 Tbsp at a time and mix until the dough will drop from the spoon but is not “runny.”
  • Drop by tablespoonfuls into hot oil (about 350 to 360°) in deep fat fryer for about 2 minutes or until evenly browned, turning to keep all sides evenly browned.
  • Note: If you have never cooked hushpuppies before, remember to turn them often, even in a deep fryer. If allowed to brown on bottom first, the hushpuppies will become “bottom heavy” and will not easily turn, resulting undercooking on the top.

    Reporting back: I made your hushpuppies over the weekend (with fried fish and assorted other goodies) and they were great! I added a little minced jalapeno pepper because I had them and wanted a pinch of heat...but your recipe rocked. Thanks so much and a Big 5! =)
