Ingredients

How to make it

  • Boil potatoes until fork tender; drain and put into a mixing bowl;
  • Drizzle rice vinegar and olive oil over potatoes and toss to coat;
  • While the potatoes cool, chop the celery, green pepper, green onions, and boiled eggs - set aside;
  • Mix mayo, sour cream, mustard, pickle relish and juice, and seasonings;
  • Pour the dressing mixture over the potatoes, fold in the chopped vegetables, and mix.

    Well, this is my style of recipe with full on flavour. I will be giving this a try tomorrow. I reckon I can guess what I'm going to think of it also. HMmmmmmm

    I use pickle juice in my potato and macaroni salad recipes! A trick from my grandmother. Great post!
