Ingredients
  • 6Tabl;spoons butter oor1/2stick
  • 1/2cupchopped gree3n onions
  • 1/2cupslicedfreshmushrooms
  • 1lbjumbolumpcrabmeat
  • 1/4cupdry Ssherry
  • 1/4 cup roasted bell pepper
  • 4slices toasted French bread
  • 1/4cupflat leaf parsley for garnish
  • Pinch of Cayenne

Directions
  1. p[reheat the Broiler. Melt 3 tablspoons of the butter in a large skillet over medium -lows heat.Add the green onion and mushroom and saute until the green onion becomes limp but not browned
  2. Add the crabmeat,red bell pepper and sherry and turn the heat up a bit. Cook shaking theskillet(don't stir)unti lthe sherry is boiled away
  3. Melt the remainingg3 tablespoons of butter rinto thecrabmeatmixtureand pileit on to the roundsoftoasted French bread on oven proof dishes.Run the plates under rthe broiler.about 5 inchesfrom the heat for 2-3 min or until the crabmeat sizzles
  4. Garnish with the parsly and Cayenne
  5. Enjoy.
  6. This is an authentic gourmet treat and easy for us peasants to present
