Pretty Pleasing Pumpkin Bread

- 3 cups canned pumpkin puree shopping list
- 1 ½ cups vegetable oil shopping list
- 4 cups white sugar shopping list
- 6 eggs shopping list
- 4 ¾ cups all-purpose flour shopping list
- 1 ½ teaspoons baking powder shopping list
- 1 ½ teaspoons baking soda shopping list
- 1 ½ teaspoons salt shopping list
- 1 ½ teaspoons ground cinnamon shopping list
- 1 ½ teaspoons ground nutmeg shopping list
- 1 scant teaspoon ground cloves shopping list
- 2 teaspoons vanilla extract shopping list
- 1 (10 oz.) package Hershey’s cinnamon chips shopping list
- walnuts (optional)* shopping list
- Glaze: shopping list
- juice of ½ fresh orange shopping list
- Powdered sugar, sifted shopping list
How to make it
- Preheat oven to 350°.
- Grease and flour three 9x5-inch loaf pans or (8) 7 ½ x 3-inch loaf pans.
- In a large bowl, mix together the pumpkin, oil, sugar, vanilla and eggs.
- Combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg and cloves.
- Stir dry ingedients into the pumpkin mixture until well blended. Divide the batter evenly between the prepared pans.
- Bake in preheated oven for 45 minutes to 1 hour.
- The top of the loaf should spring back when lightly pressed.
- Glaze:
- Mix juice of ½ orange with powdered sugar until desired consistency.
- Drizzle over warm loaves.
- When baking in small individual loaves, reduce baking time to approx. 40 minutes.
- *If using walnuts, roast them in a dry frying pan, or a 350° oven for approx. 3-5 min. to release the oils for a tastier nut.
