Ingredients
  • 3 cups canned pumpkin puree
  • 1 ½ cups vegetable oil
  • 4 cups white sugar
  • 6 eggs
  • 4 ¾ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 ½ teaspoons salt
  • 1 ½ teaspoons ground cinnamon
  • 1 ½ teaspoons ground nutmeg
  • 1 scant teaspoon ground cloves
  • 2 teaspoons vanilla extract
  • 1 (10 oz.) package Hershey’s Cinnamon Chips
  • Walnuts (optional)*
  • Glaze:
  • Juice of ½ fresh orange
  • Powdered sugar, sifted

Directions
  1. Preheat oven to 350°.
  2. Grease and flour three 9x5-inch loaf pans or (8) 7 ½ x 3-inch loaf pans.
  3. In a large bowl, mix together the pumpkin, oil, sugar, vanilla and eggs.
  4. Combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg and cloves.
  5. Stir dry ingedients into the pumpkin mixture until well blended. Divide the batter evenly between the prepared pans.
  6. Bake in preheated oven for 45 minutes to 1 hour.
  7. The top of the loaf should spring back when lightly pressed.
  8. Glaze:
  9. Mix juice of ½ orange with powdered sugar until desired consistency.
  10. Drizzle over warm loaves.
  11. When baking in small individual loaves, reduce baking time to approx. 40 minutes.
  12. *If using walnuts, roast them in a dry frying pan, or a 350° oven for approx. 3-5 min. to release the oils for a tastier nut.

I love making food gifts and this makes a really nice one. I was wondering if you could use fresh pumpkin also? Thanks for the post.


I suppose you could, I just haven't tried it. The canned is so easy...maybe if I had a pumpkin patch....lol!


Fom what your picture shows, if it is as pleasing to the palate as the package is to the eye,it's a winner all around. You'll have everyone wanting to be on your gift list.
