How to make it

  • Put all ingredients into a blender or food processor and process until smooth. It should come out bright green in colour.
  • Dee's Tips: I have seen it made up and put into a squeezy bottle like you'd use for mustard and just set on the table to use as you will. Serve it with Cuban Bread or some other really nice full bodied bread. We have used it as a chutney/sauce with a steak and it was GREAT then too. Serve it with your fav crisps/chip, Dorito, or use as a sauce in a Veg taco or sandwich.. the ideas are only limited by ones Imagination! Go crazy with it! Enjoy!

    I just made a vegan version of this using Vegenaise. I also reduced the amount of "mayo" and added extra virgin olive oil and a small amount of water (this was necessary since I used my blender instead of the food processor-didn't feel like having to clean all those parts!) came out fantastic!!!! Thanks for the recipe!!

    Mayo! Of course! Had some food from the Peruvian chicken place in Decatur today. My co-worker ordered the chips and avocado dip. It was kind of like guacamole, but...... We guessed sour cream, but mayo makes MUCH more sense.

    I'm sorry, this recipe is NOT!!!! for Peruvian Aji!!!! I live with my best friend who is a Peruvian chef and when he saw this recipe he Laughed,said WHAT???? and waved his hand like get that off of there. We eat Aji all the time. you can buy it in stores. it's made by Inca foods. on the ingredients all there is, Aji Amarillo(yellow hot peppers), Sal(salt),Acido citrico( Citric Acid)THAT's IT!!!! you can watch a famous Peruvian chef make it on youtube.com, don't pay attention to this recipe if you want traditional Peruvian Aji

    Excited to try this recipe out. hoping its similar to the sauce they serve at my favorite peruvian place in southern california, the restaurant called EL HATUCHAY located on Sherman Way in North Hollywood, California.

    I am SO excited right now by this recipe, you have no idea. I use to live in California and would frequent a Peruvian Restaurant and loved this sauce on my grilled chicken, I would purchase it to go.. Now I have the recipe and I can make it myself.

    I love this sauce. They serve it at our local Peruvian restaurant and I've been wondering about the recipe. Thank you for sharing it! I've rated it a 5 because I already know that I love it. I agree about it being good with French bread, only I recommend spreading it THICK!!!
