Sweet Potato Mellow Crisp Recipe
Such a great way to fix sweet potatoes. We love this and hope you do too.

Ingredients
  • 2 large cans yams
  • 1/4 cup orange juice
  • 3/4 cup flour
  • 1/2 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 stick butter
  • 1-1/2 cups miniature marshmallows

Directions
  1. Place yams in a shallow baking dish and pour the orange juice over.
  2. Combine flour, sugar, cinnamon and salt in a bowl and mix well.
  3. Cut in butter until mixture resembles coarse crumbs then sprinkle over the yams.
  4. Bake at 350 for 30 minutes.
  5. Sprinkle marshmallows on top and put under the broiler until lightly browned.

I just wanted to let you know we loved this. I fixed it with garlic roasted chicken and hybrid purple green beans and cornbread. It was a very good meal. Thank you.

P.S.I want to try this also with a hybrid white sweet potato I found at the local Farmer's Market.

This is the first recipe I've printed off to use from this site - so thank you! I'm not much of a cook, but I just bought myself some Corningware casserole dishes and want to use them! This actually looks doable!


I love sweet potatoes. I will keep this for future use, I could eat sweet potatoes everyday
