How to make it

  • Combine the orange juice, sugar, ginger, marmalade and garlic in a blender, puree. Pour into a shallow casserole or baking dish; add halibut. Set aside to let marinate about 20 minutes.
  • Drain, reserving marinade. Heat oil in a large skillet over medium-high heat. Add the halibut steaks; cook until the fish browns around the edges, about 5 minutes. Turn; lower heat to medium. Cook until the fish flakes easily, about 4 minutes. Transfer to a platter. Add the reserved marinade to the skillet. Raise the heat to medium-high. Add the soy sauce; heat to a boil. Cook until mixture thickens, about 1 ½ minutes.

    You´re right ¡¡ This must be delicious. Love almost any kind of fish, but halibut is one of my favorites. I do really like the orange and ginger seasoning, and now that I´m trying to eat more fish, this looks a very nice variation on traditional ways of cooking. Thanks.
